Lavorazioni per rendere le varietà più adatte a determinati usi:

Riso a cottura rapida: parziale cottura seguita da disidratazione, che consente di accorciare notevolmente i tempi di cottura successivi
Riso arricchito: arricchito di vitamine idrosolubili dopo la raffinazione, per reintegrare le perdite ad un livello adeguato per l'organismo

Riso parzialmente bollito: (parboiled) riso integrale lasciato immerso in acqua per uno o due giorni e poi trattato al vapore per ridurre la perdita dei composti nutritivi durante la raffinazione
Riso convertito: prodotto analogo al (parboiled), ma ottenuto con tecniche più perfezionate
Riso integrale: conserva parte della crusca in seguito ad una raffinazione ridotta al minimo (contiene più vitamine, minerali e fibre di quello bianco).

Riso Basmati: di origine indiana, chicco sottile e leggermente profumato
Riso venere: dal chicco sottile e nero, originario della Cina, oggi coltivato nella Pianura Padana.

Processo d'uso

Raccolta:

Mietitura e Trebbiatura: taglio o distacco delle spighe (mietitura) e prima operazione di separazione della paglia dai frutti della spiga, il chicco si presenta rivestito delle glumelle e prende il nome di risone.

Lavorazioni:

Sbramatura: operazione oltre la trebbiatura atta a separare le glumelle,molto aderenti al chicco di riso. Senza questa operazione il riso è detto “Integrale”, in questo caso la presenza delle glumelle garantisce un maggior apporto di fibre, sali minerali (potassio e magnesio, che combattono e prevengono l’osteoporosi), vitamine e proteine.

Sbiancatura: attraverso lo sfregamento tra i chicchi stessi e con ruvide superfici si elimina la pellicola interna, quindi i suoi strati più periferici ed il germe (seme vero e proprio, capace di fermentare), il prodotto dopo questa operazione è il riso bianco.

Lucidatura: ha lo scopo di rendere il chicco più bianco e levigato. Il riso così ottenuto è noto come lavorato o raffinato. Esso viene infine selezionato e confezionato.

Brillatura: con l’uso di oli vegetali (olio di lino) si protegge il chicco ed il riso viene anche detto camolino o brillato quando si è fatto uso di glucosio e talco per dare maggior brillantezza.

Utilizzo: La classificazione commerciale del riso si basa su quattro tipi, ciascuno dei quali comprende diverse varietà:

Riso comune (o originario): adatto per minestroni e dolci
Riso semifino: per riso in bianco e antipasti
Riso fino: per risotti e contorni (chicchi lunghi e affusolati)
Riso superfino: per risotti e contorni (chicchi grossi e molto lunghi)

Process of use

Harvest:

Glazing: with the use of vegetable oils (linseed oil) protects the grain and rice are also told Camolino or shine when use is made of glucose and talc to give more brilliance.

Use: This commercial rice is based on four types, each of which includes several varieties:
Common rice (or original): suitable for soups and sweets
Semifino Rice: Rice and White starters
Long Grain Rice: for rice and side dishes (beans long and slender)
Superfine rice: for rice and side dishes (beans big and very long)
